At this time, customary castle architecture called for large imposing features. This norm marked yet another dramatic and lasting change for the property. The Dallavala family decided to construct the grand façade and tower, two dominating features which, still to this day, give distinct character to Castello Tudisco.

Today, much care is taken in preserving the land as a biologically protected area. Though the technology is available to chemically protect an entire orchard from various environmental challenges, we practice agricultural techniques that require the addition of no chemicals; herbicides, pesticides, and fungicides are strictly forbidden. It is this commitment to the natural state of the fruit which allows us to deliver the highest quality olive oil while maintaining the most compelling rich and smooth fruity flavors found in olive oil the world over.

Since the mid 1600’s, our family has been tending to the land with the same care and respect as the original settlers of this great estate. It was with immense honor that the castle be renamed to respect original founders and developers. With strong ties to the past, and an eye on the future, we are proud to make every breath, every olive, and every satisfied pallet a true reflection of the tradition created hundreds of years ago.
