The products extracted from our first cold pressing are Extra Virgin Olive Oil, additional olive oil, and a paste-like material. Additional olive oil is filtered once more and bears the name Virgin Olive Oil, while the paste becomes the key ingredient in our Évooc line of tapenade spreads.
To create the optimal balance between nature and flavor; we use Leccino Olives and natural ingredients in all of our Ioo flavors. The smooth, mild olive oil works perfectly with various natural infusions. Peperoncino, Rosemary, and White Truffle are three infusions that will truly stimulate the palate and recipe book alike.
Castello Tudisco is family owned estate through and through. With limited production on many of our products, we must take care with both what goes into each bottle, and the bottle itself; the oil may be the best in the region, but if it doesn’t arrive in your kitchen just as it was bottled, the quality means nothing. To ensure that your oil is as fresh as it was when it was first cold pressed, we fill, label, and hermetically seal each dark green glass bottle in our estate production facility.
