In the world of olive oil, the number of products a company produces means nothing without the quality and dependability demanded by discerning consumers. Though in the immediate future, Castello Tudisco plans to broadened its Ioo (Infused Olive Oil) line, our values of quality and tradition will only strengthen as we develop and introduce new products which meet our high standards.
Currently, Castello Tudisco is proud to offer 5 distinct products: BéVoo, DéVoo, Ioo Peperoncino, Évooc, and Évooc Peperoncino. Each product begins the same way; precise amounts of pressure is applied to a perfect mixture of either Coratina or Leccino olives resulting in a brilliantly golden liquid with less than 1% acidity; this is our Extra Virgin Olive Oil. All oils measuring above 1% acidity cannot be defined as Extra Virgin.
Depending on the olive and the manner with which it was harvested, produced, transported, and bottled, the resulting extra virgin olive oil could be certified organic; our BéVoo (Biological Extra Virgin Olive Oil) made of organically harvested Coratina Olives, holds this very distinction. DéVoo, is also an Extra Virgin Olive Oil produced from Coratina Olives; its Divinely golden color, and heavenly deep aroma, help DéVoo stand true to its name of Divine Extra Virgin Olive Oil. In general, the Coratina Olive boasts a strong fruity flavor with characteristic bitterness complimented with a hint of sweetness. The aroma is that of green leaf with a touch of apple.

The products extracted from our first cold pressing are Extra Virgin Olive Oil, additional olive oil, and a paste-like material. Additional olive oil is filtered once more and bears the name Virgin Olive Oil, while the paste becomes the key ingredient in our Évooc line of tapenade spreads.
To create the optimal balance between nature and flavor; we use Leccino Olives and natural ingredients in all of our Ioo flavors. The smooth, mild olive oil works perfectly with various natural infusions. Peperoncino, Rosemary, and White Truffle are three infusions that will truly stimulate the palate and recipe book alike.
